Single Vineyard Onkaparinga Rocks Shiraz

Ministry of Clouds Single Vineyard Onkaparinga Rocks Shiraz is grown on the estate Chase Vineyard atop Onkaparinga Gorge, overlooking some of McLaren Vale's oldest farms.

The site is characterized by a steep southerly slope and a thin veneer of grey loam soils over a rocky base. These conditions lend a unique character to the wine.

The fruit is harvested in the cool of night to retain freshness, then gently destemmed to leave the berries whole. Fermentation is in traditional open vats, hand plunged daily and regularly tasted.

The wine is then basket pressed to a mix of seasoned and new French oak puncheons to mature.

Red purple, Ministry of Clouds Single Vineyard Onkaparinga Rocks Shiraz has blue and black fruit flavours with a minerally tannin structure. Cellaring potential is 10 years.
